Pâtisserie! ^.^

Hi guys! Today, i'll be continuing on from yesterday's post and i might just add a few recipes! Anyway, i'm just going to give you guys some information on the types of pastry.


The first type of pastry is called the Shortcrust pastry. Shortcrust, or short, pastry is the simplest and most common pastry. It is made by rubbing the fat into the four until the mixture resembles fine breadcrumbs. The process of making pastry includes mixing of the fat and flour, adding water, and rolling out the paste. Another type of shortcrust pastry is the Sweetcrust pastry where the paste is sweetened.




The next type of pastry would be... Flaky pastry! Flaky pastry is also another common pastry. It expands when cooked and the result is a crisp and buttery pastry. The "puff" is obtained by baking the pastry at a high temperature and lowering the temperature to finish.




The difference between puff pastry and flaky pastry is the way it's made and the end result. To make flaky pastry you spread your fat a little at a time whilst repeatedly rolling and folding the sheet onto itself, this builds up lots of thin layers of pastry and these layers fluff up or flake when baked. Puff pastry is quicker to make as all the fat is added all at once, in knobs, or little lumps, the pastry is rolled out and the fat is randomly dispersed, when baked the pastry puffs up with lots of random bubbles. The end result of a puff pastry is light, flaky and tender. 




Choux pastry is a light pastry that is filled with various flavors of cream. It is often topped with some chocolate to finish. Choux pastries can also be filled with things like cheese, tuna, or chicken to be used as appetizers. Examples of pastry that can be made with Choux pastry: Profiteroles, Croquembouches, Eclairs, Beignets, St. Honore Cake, Gougeres, etc. 


Last on the list would be Phyllo pastry! Although there are many more kinds of pastry out there like Pate Sucree pastry, Hot Water Crust pastry and Suet Crust pastry, I'll only be listing the common types of pastry. Phyllo pastry. So, what is Phyllo pastry? Phyllo pastry is a delicate a and thin pastry that may break very easily as it is made in very thin sheets and used as a casing for numerous delicate savoury and sweet dishes. Made with high gluten content flour, Phyllo pastry is very difficult to make and needs careful handling because it is a thin and fragile pastry that dries out quickly. Even though ready-made Phyllo pastry is available, it is still not easy to use. It must be brushed with oil or melted butter before shaping and cooking.
